Traditional South Indian breakfast recipes are always a popular choice across Indian states. These are healthy and tasty but typically require a lot of planning, soaking, and fermenting the dough to get the desired texture and crunchiness. However, there are many instant recipes corresponding to these traditional recipes and one such popular recipe is the instant sooji appe or rava paniyaram recipe.

I have posted quite a few South Indian instant breakfast recipes, but this recipe of rava appe has to be the closest to its counterpart if not better. Basically, when you prepare idli and dosa in an instant method, you still feel that it is not 100% of the traditional recipe. Especially if you rest it for a while the difference keeps on increasing. Either it changes its color or the texture. However, this recipe or instant sooji appe does not disappoint you. The main reason is the set of ingredients and the end shape of the recipe. These are small ball-shaped donuts, which hold their shape even if it is rested. Also due to the fact that rava and yogurt are used to prepare it, it would make it even more interesting than the traditional alternative. Firstly, I have used the normal upma rava or also known as Bombay rava which is an ideal choice for this recipe. Yet you may choose other types of rava too and the other best option is fine rava for the best texture and shape. Secondly, I would heavily recommend using a nonstick pan to cook these appe compared to the cast iron pan. Cast iron pans can take more energy and oil to cook and thus making them not so effective. Lastly, I added baking soda to hasten the fermentation process. Particularly, when mixed with sour yogurt it helps to ferment it more. You may use other options like eno fruit salt and even yeast for the same purpose.

About Rava Paniyaram:

This is basically an instant or cheat version of the traditional appe or paniyaram made with ingredients like rava, yogurt, and a combination of vegetables. The traditional appe batter is prepared with rice and urad dal batter which is initially used for dosa or idli and later on the 3rd or 4th day, it is used for appe. However, this recipe of instant sooji appe or rava paniyaram is made with semolina and yogurt with baking soda for hasting the fermentation process.

Like any other traditional South Indian breakfast recipe, even this suji ke appe taste’s great when served with spicy chutney. The best choice of chutney recipes for this breakfast snack is simple coconut chutney or even red tomato chutney. These can also be consumed with spicy chutney powder too. In recent years, this instant sooji appe has also hit the street food section with a wide variety of toppings too.

Ingredients

  • 2 cup rava / semolina / suji, coarse
  • 1 cup curd
  • 1 cup water
  • 1 tsp salt
  • ½ onion, finely chopped
  • 1 carrot, grated
  • ½ tomato, chopped
  • 2 tbsp coriander, finely chopped
  • few curry leaves, finely chopped
  • 2 chilli, finely chopped
  • ½ tsp eno fruit salt
  • oil, for roasting

Instructions

  • firstly, in a large bowl take2 cup rava, 1 cup curd, and 1 tsp salt.

  • add1 cup water and mix well.

  • mix and prepare the batter.

  • further add ½ cup water, cover and rest for 20 minutes.

  • after resting the batter well mix it again.

  • now add ½ onion, 1 carrot, ½ tomato, 2 tbsp coriander, few curry leaves and 2 chilli.

  • mix well making sure everything is well combined.

  • further, add ½ tsp eno fruit salt and 2 tbsp water. alternatively, you can use baking soda.

  • mix gently forming a frothy batter.

  • heat the appe pan and add oil to each mould.

  • once the pan is hot enough, add in prepared rava batter.

  • cover and simmer for 5 minutes.

  • roast on low to medium flame until the appe turns golden brown.

  • flip over and cook both sides.
