How to make Valentine’s brownie bites

The brownie recipe itself is a foolproof, delicious brownie base. It’s also really simple; you just mix the wet ingredients and dry ingredients separately, then combine them. You can use dark or regular unsweetened cocoa powder depending on your preference for these Valentine’s brownie bites.

Usually when I make brownies, I put the batter straight into a greased baking pan. However, when I am going to cut shapes out of them (like for these brownie hearts), I like to line the pan with parchment paper. I grease the parchment paper just like I would a pan, but this way I can lift the paper (and cooked brownies) right out of the pan and onto a surface for cutting. It’s much easier than trying to cut and pull the shapes out from a high-sided pan.

Another tip is to let the brownies cool completely (about 30 minutes) after baking and before cutting. This helps the brownies set completely, and also makes it easier to cut.

To make these brownie hearts: Using a small heart-shaped cookie cutter (I’m a fan of this nesting heart cookie cutter set from Wilton that has several different sizes – affiliatelink), cut hearts into the brownies directly on the parchment paper, then set the hearts onto a large piece of waxed paper. I find it helpful to measure shapes out first to maximize the brownies (see the picture above for how I lightly pressed the cutter into the brownies first and created a little pattern to get as many hearts as I could before doing all of the cutting).

For these Valentine’s Day brownie bites’ festive colors, I use red, pink, and white candy melts. One color at a time, melt the candy melts according to package directions. You should focus on one color at a time since the candy will re-harden quickly and doesn’t do well when re-heated.

Place the melted candy in a plastic zipper bag, and cut off a very small bit of one of the tips of the bag. I say “very small” because the hole is always bigger than you may think. Start small so you don’t have a big oozing hole. You can always cut off a bit more if it ends up being too small.

Pipe zig-zag stripes over 1/3 of the brownie hearts with your first color. Repeat with the other two colors until all the brownie hearts are decorated.

Once the candy melts have cooled and hardened (this should happen quickly even at room temperature), break off any excess around the edges of the hearts. You can then serve them, store them for a few days, or even wrap them up as a Valentine’s Day gift for a teacher, friend, or neighbor.
